Creamy Southwest Dressing
Today for lunch my kids were going to eat taquitos when the $&*! hit the fan. We were out of sour cream. I was about to remind them that they are lucky to have food at all when I remembered I my sweet friend Rachel told me she used Greek Yogurt in place of sour cream. Brilliant. So instead of guilt tripping them I gave them each a dollop of yogurt. At first they were skeptical but after trying it they asked for more. Crisis solved. But the best part of our lunch was that I discovered a quick and easy dressing. Just mix Greek yogurt and your favorite salsa together. So maybe I didn’t “discover” this but it was new for me! I used Trader’s Joe’s Red Authentico salsa but I think I’d really like to use a chipotle one next time. It was actually very tasty and felt like an indulgence since it’s creamy. Here’s an idea for a healthy, totally guilt free, and yummy salad.
1 Head of Chopped Romain
1 Grilled Chicken Breast
1/4 Cup Black Beans
1 Small Tomatoe
1/4 Cup Corn
1/8 Cup Chopped Jicama
1/4 Sliced Avocado
Dressing
1/8 Cup Greek Yogurt
1/8 Cup (of your favorite) Salsa

Thanks for the great idea! I have been using Greek yogurt as a sour cream sub for about six months but never thought to mix it with salsa! Genius! LOL My girls love it too. Isn’t Greek yogurt the best?
