Green Tomatillo Chicken
Here is another on of my staple “I don’t have time to cook” recipes. You can use this in tacos, burritos, on salads, or my favorite way: make a “bowl”. To make a “bowl” I put lettuce in the bottom, then add about 1/4 cup brown rice, 1/4 cup black beans, the chicken, and top with tomatoes, black olives and salsa. Okay so it’s really a salad but because I call it a bowl it feels like I’m not eating a salad. It’s yum! But like I said it works well with tortillas too and it’s not bad by itself with a side of whatever veggies you have on hand.
Green Tomatillo Chicken
8 boneless, skinless chicken breasts cut up into bite-sized pieces
1 med onion, chopped
2 cloves of garlic, minced
1 tsp. dried oregano
1 tsp salt
1 tsp cumin
1 tsp ground pepper
1 tbs lemon juice
1 cup green tomatillo salsa (I used Trader Joe’s Salsa Verde but there are plenty of choices out there.)
½ cup chicken broth
In a large, skillet sauté onion and garlic for about 1 minute. Add the rest of the ingredients. Bring to a boil, reduce heat to low and simmer for about 20 minutes. Check chicken to make sure it is done. I’ve put this in the crock pot too and it works. I’m just not crazy about the texture of chicken when it has been cooked in the crock pot. If you do this you might want to reduce the chicken broth a little.
Macros (Chicken Only) – Approximately 181 calories, 32 protein, 5 carbs, 2 grams fat.
On another note I’m sure you’ve heard about the peanut butter recall. But here is a link to a list of recalled products (scroll down). My favorite protein bars, Supreme Protein, are on the list. My hubby heard today on the radio that some Promax bars have been recalled as well but I couldn’t find them on the list. Good thing because I didn’t plan my food very well yesterday and I stopped at the drugstore and bought some for me and my kids. Yikes!
