Brent’s Great Chili Recipe
I really have to give credit to my husband for this chili. I love cook but I have to say he really is the better cook of us two. Whenever I make something he always suggests adding this or that. He has a real knack for being able to make a good dish great. This is perfect for cold winter months!
Brent’s Chili
1 pound ground buffalo OR turkey OR beef (I buy the buffalo burgers from Traders Joes and smash them up)
1/2 tsp olive oil
2 onions (diced)
3 cloves garlic (diced)
6 oz can of tomato paste
28 oz can of diced tomatoes
2 cups of water
2 tbs chili powder
1/2 tsp sea salt
1/2 tsp allspice
1/2 tsp cumin
1/2 tbs Worchestire Sauce
1 tbs apple cider vinegar
2 cans of kidney beans w/juice (white or pinto beans work well too)
Put the oil, ground meat, onions and garlic in a large stock pot. Saute for about 2-3 minutes. Add the rest of the ingredients and bring to a boil than reduce heat and simmer uncovered for about 30 minutes. I’ve never made this in a crock pot but I don’t see any reason why it wouldn’t work. You may want to reduce the water by half. I usually double the recipe so I can have chili all week or freeze half of it for a night I’m too tired to cook. Hope you like it!!
Serves 8. Approximately 250 calories, 21 grams of carbs, 28 grams of protein, 6 grams of fat (calculated using buffalo)
