Piccata-like Chicken with you guessed it….
artichokes!!!!! Leave’em out if ya don’t like’em.
This is one of my last minute “I don’t know what to cook” recipes because the ingredients are all staples in my kitchen. It’s that easy and quick and most importantly good for you. And honestly I don’t really know if you can even call this Chicken Piccata. I looked it up on wikipedia
Piccata-like Chicken with Artichokes
4 chicken breasts
1 tbs olive oil
1/2 white onion- diced
1 garlic clove – finely minced
1/4 cup of lemon juice
1/2 cup of chicken broth
2 tbs of capers
1/2 cup artichoke hearts (cup up)
1 tbs fresh parsley finely chopped
Season chicken with sea salt and pepper and set aside. Heat olive oil in a large saute pan and saute onions until and garlic for about 2 minutes. Then add chicken and cook until chicken starts to brown. Add lemon juice, broth, capers, artichokes, and capers. Bring to a boil. Reduce heat and simmer until chicken is cooked through about 15 minutes or so. Sprinkle with fresh parsley and serve with a huge salad. I use My Favorite Dressing on top of the salad. (Note – If you don’t have fresh parsley just add 1/2 tbs dried parsley while it’s cooking.)
Sometimes, I like to cut the chicken up into small pieces before cooking and serve it over rice with a huge salad on the the side.
Serves 4. Approximately 184 calories, 28 g protein, 5 g carbs, and 4 g fat per serving.
