Mediterranean Quinoa Salad Recipe
1 cup of quinoa
1 can of artichoke hearts (quartered)
1/4 cup olive oil
1/4 cup of Kalamata olives (chopped)
1/4 cup of sundried tomatoes (chopped)
1 tbs of dried oregano
sea salt to taste
fresh basil
Cook the quinoa in water. (I use twice the amount of water as quinoa. Bring to a boil. Throw in the quinoa. Reduce heat and cook until all the water is absorbed.) In a separate bowl, mix together the rest of the ingredients. When the quinoa is done toss with the artichoke mixture. Use kitchen scissors to cut pretty little slivers of basil. Be obsessive compulsive and meticulously sprinkle them over the top of the quinoa fussing over each sliver.
I made this salad last minute for a friend’s birthday celebration Sunday. It turned out good but how could it not with Kalmata olives, artichokes, and sundried tomatoes! I feel like I should insert “nom nom nom” right here but I just can’t bring myself to do it. Somehow imagining that sound makes me a little nauseous and besides I just don’t get it. I’m like person 2 from this urban dictionary definition.

go to staples for a party? well, does that mean raw vegan staples, my raw vegan apple crumble is stellar, as are my dessert balls, but I mean if cooking with a pound of butter and gluten flour Ina Garten style counts, then I could make some pasties that will make you beg for mercy
I’ve never tried quinoa Jenn. Is it simular to rice? Can I get it at my regular grocery store?
That looks delicious! Yes, sundried tomatoes, olives and artichokes totally make a dish!
My secrets? Cheese, and butter. But it’s not what you’d think. I use small amounts of cheese with a very pronounced flavor, like sharp cheddar, OR use a cheese that is lower in fat, and spreads so it goes a long way- think lf-feta, cream cheese or goat cheese. And butter? A little bit goes a looooong way. And if I have learned anything in culinary school, it is that butter is love =D

I make a really similar salad with chickpeas and spinach added. Last fall I think I ate it about three times a week!
My go-to party staple is so lame, but so easy. Homemade hummus and veggies. Or cookies. Or both. 😀

This is great! Honestly, I know quinoa is good for me, but I never know quite what to do with it. Unlike rice, I think it’s a bit boring plain. This looks yummy AND healthy

hahahah i love you. my friends and i say nom nom nom all the time. this salad recipe looks AWESOME! i am for sure going to be putting it in the rotation of summer salads that i take to BBQs. thank you, lady! nomilicious foods for me include avocado, hummus, peanut butter, cheese.. obviously not all together, but you know! those ingredients make everything better!

My go-to- is Guac. It’s sooooo easy: avo, jarred salsa (just a dollop), squeeze lime or lemon and some powdered garlic. Seriously people kill each other for it. Or, they finish every bite.
I always do say Nom nom, and yet if you think about it, it’s the sound someone makes as their mouths are full and food is dribbling out the sides. No bueno.

That recipe sounds soooo good, and I love artichoke hearts and sun dried tomatoes- those are both ingredients I’ve been using a TON lately- why have I never combined them?! My party staples are homemade brownies. So many people have only tasted them from a box, and they are a gazillion things better homemade and still really easy!

i love quinoa!! I make quinoa chili, quinoa tacos, quinoa stuffed bell peppers, quina tabbouleh, and just quinoa!!!! i’ll def try this way too. artichokes, sundried tomatos, and kalamata olives are all deal sealers for me
